Spinach Apple Salad



I thought I'd follow up my last post with something a little more healthy and colorful. And with a lot less gluten. But no less flavor! Random fact about me: I HATE boring salads. Iceberg, shredded carrots & ranch takes me right back to my grade school cafeteria. And then the mystery meat nightmares start. So I won't touch them. I will eat shameful amounts of fun salads with lots of flavors & textures. Seriously. I made so much of this salad it could fill up the whole buffet at Ryan's. And then I ate it. I mean… I gotta get my kicks somewhere.

Let me tell you a little something. Green apples, cheddar & bacon are the most delightful flavor combo ever. One of those flavor combos that changes your life. It makes salad a lot more fun. Even your carnivore husband will like it. 



Caution: You may want a snow shovel to rake it all in. Kidding. Kinda.

Enough braggadociousness {I certainly hope that's a word}--here's the recipe!

Ingredients:
  • 1 [6 oz] bag baby spinach [I love butter lettuce too!]
  • 2/3 cup shredded cheddar
  • 1 large granny smith apple, finely diced
  • 1/2 large red onion, finely diced
  • 1/2 cup dried cranberries
  • 1 [2 oz] bag real bacon bits
  • sweet Vidalia onion salad dressing [I tested with Ken's]

Directions:
  1. Layer each ingredient [except dressing] in a salad bowl or on a platter. Toss to combine. Dress to taste. Done!
