What the heck do I do with bok choy?

Bok choy has to be one of the most underrated vegetables right now. There is a sea of kale recipes all over Pinterest. I sort of think of this guy going through kale recipes:


JUST ADMIT IT--you're sick of kale. I'm with you. There are other leafy greens out there, folks! Take bok choy! It's totally in season right now, and it's delicious. However, it looks scary & weird so people tend to shy away from it. It's actually an Asian cabbage that has a milder, sweeter flavor that cabbage, and it's texturally different. It's perfect for so many recipes.

It'll be the new catch-all vegetable like kale was in 2012: calling it now.
